Aubergine and Halloumi curry

    This is so quick and easy to make - perfect for mid-week!


    Ingredients:

    Onion

    Aubergine

    Halloumi

    Garam Masala

    Natural Yogurt

    Spinach


    Method:

    1. Slice an onion and chop an aubergine and fry them in a pan.

    2. While that is frying, cut the halloumi into cubes, put it in a bowl and coat with a few spoons of garam masala.

    3. Once the aubergine is cooked, add the halloumi and stir.

    4. Add a few tablespoons of natural yogurt or creme fresh and a handful of spinach.

    5. Serve with brown rice.
