This is a delicious and simple stew that is so easy to make and full of goodness!
In a large saucepan fry an onion, garlic, 2 celery sticks, 3 carrots, 1 leek and a sweet potato.
Rinse around 200g of lentils in cold water then add these to the pan.
Add enough water to just cover the ingredients.
Season with 3 bay leaves and some herbs (I used thyme).
Once the veg and lentils are all cooked through add a few handfuls of kale.
Depending on how much liquid you want you can also add some more water.
Cook for a further 10 minutes on a low heat.
Serve on its own or with some crusty bread.
