Winter sweet potato, lentil and kale stew

    This is a delicious and simple stew that is so easy to make and full of goodness!


    1. In a large saucepan fry an onion, garlic, 2 celery sticks, 3 carrots, 1 leek and a sweet potato.

    2. Rinse around 200g of lentils in cold water then add these to the pan.

    3. Add enough water to just cover the ingredients.

    4. Season with 3 bay leaves and some herbs (I used thyme).

    5. Once the veg and lentils are all cooked through add a few handfuls of kale.

    6. Depending on how much liquid you want you can also add some more water.

    7. Cook for a further 10 minutes on a low heat.

    8. Serve on its own or with some crusty bread.
