Broad bean and mint dip

This is a nice alternative to regular chick pea humous. Broad beans are a good source of protein which we should be eating with every meal. Making dips is so easy. It's cheaper and much healthier than buying them from the supermarket (the oil you use will be much better quality). You can also get creative and mix up the flavours - cumin and rocket leaves are also great additions to this.

Ingredients: 500g broad beans, handful mint leaves, 2 garlic cloves, juice of one lemon, 2 tbsp extra virgin olive oil.

Remove the beans from their pod.



Boil them for 5 mins. Drain them and put them in a bowl of cold water.




Pop them out of their grey skins (pierce the skin with a knife and squeeze them out).




Put the beans and the rest of the ingredients into a food processor - add a little more water for your desired texture.




Have with pitta breads, oat cakes or chopped veg.
