Cinnamon, pecan & cacao cookies

You can experiment with flavour combinations for these biscuits (e.g. add raisins, almonds, dark chocolate...). The almonds contain high levels of protein and healthy fats which will help you feel full. The cinnamon also helps to balance out blood sugar levels.


Ingredients:

250g ground almonds

1 tsp bicarbonate of soda

2 tsp ground cinnamon

5 tbsp coconut oil

2 tsp vanilla extract

2 tbsp maple syrup

Handful chopped pecans

Handful cacao nibs



1. Preheat oven to 160oC.

2. In a bowl, mix together the ground almonds, bicarbonate of soda, cinnamon, coconut oil (you may need to melt this first in a pan), vanilla extract and maple syrup.

3. Stir in the chopped pecans and cacao nibs.

4. Roll 2 tablespoons of the mixture into balls, put on a baking tray and press further so the biscuit are about 0.5cm thick.

5. Bake for 10-12 minutes, or until browned on the edges.
