Oatmeal and raisin cookies

These make a delicious afternoon treat with a cup of tea. Enjoy guilt free!


You can replace the butter with coconut oil for a dairy free recipe.


Ingredients:

150g ground almonds

125g oatmeal (I use Mornflake stoneground oatmeal)

1 tsp baking powder

2 tsp ground cinnamon

3 tbsp maple syrup

75g melted butter

Handful raisins


Method:

1. Preheat oven to 180oC.

2. In a bowl, mix together the ground almonds, oatmeal, bicarbonate of soda, cinnamon, melted butter and maple syrup.

3. Stir in the raisins.

4. Roll 2 tablespoons of the mixture into balls, put on a baking tray and press further so the biscuit are about 0.5cm thick.

5. Bake for 12-18 minutes, or until browned on the edges.

6. Enjoy!
