This Shepherd's pie is packed full of veggies and pulses. Blending the mixture for a few seconds is the key to creating a more 'meaty' texture.
2 onions (your choice of red or white)
3 garlic cloves
2 celery sticks
Handful of chestnut mushrooms – around 150g
2 tins mixed beans
2 tins chopped tomatoes
Potatoes - sweet, regular or a mixture of both.
Chop the onion, crush the garlic and fry both in a large saucepan.
Peel and chop the carrots, chop the celery, mushrooms and leeks. Add these to the pan and cook until softened.
Drain and add the mixed beans along with the chopped tomatoes.
Make the mashed potato.
Using a stick blender, pulse the veg and bean mixture for about 10 seconds.
Put the mix in an ovenproof dish, add the mash and cook in the oven until golden brown on top.
