Spinach, watercress and rocket salad
Red onion - I squeezed the juice of 1 lime onto the sliced onion and left it for half an hour before eating. This keeps the crunch of the onion but takes away the strong oniony flavour and replaces it with a great limey one.
Extra virgin olive oil (this is great for inflammation and heart health so no need to use sparingly).
